Vegan Carnitas Tacos

The first time I had jack fruit tacos was at Sage Plant Based Bistro in Culver City. These tacos blew me away. The flavors, taste and texture were amazing. I knew right then that I was going to have to try to make these at home.

These tacos are surprisingly easy to make and perfect for a weeknight meal or to add your you meatless Monday routine.

If you are eating low carb 3 tacos is only about 35 grams of carbs!

Where to buy Jack Fruit

Canned jackfruit is the easiest to buy and use. I also like having the cans so that I can make this recipe on a whim.

You can usually find canned jack fruit at your local Asian market, Wholefoods or online at Thrive Market or Amazon.

These jackfruit carnitas tacos are so tasty and easy to make. They are perfect to meatless Monday or Taco Tuesday!

Ingredients

  • 1 red onion half diced half thinly sliced

  • 1 red bell pepper thinly sliced

  • 1 jalapeno diced

  • 1 can of jack fruit drained and thinly sliced.

  • 1 tablespoon of chili powder

  • 2 teaspoons cumin

  • 2 teaspoons paprika

  • 1 tablespoon powder onion

  • 1 tablespoon oregano

  • 10 corn tortillas

  • Optional toppings
  • Diced avacados

  • Chopped cilantro

  • Lime wedges

Directions

  • Prep vegetables.
  • Drain the jack fruit reserving about 1/4 of a cup of the liquid.
  • Slice the jackfruit. The pieces are usually like little pie shapes. You want to slice them thinly thru the pointy end of the pie slice. So you have 1/4 inch slivers.Slicing Jack Fruit
  • Heat up oil in a frying pan. Add diced onion and jalapeño fry until union is translucent.
  • Add in the spices, chili powder, cumin, paprika, powdered onion and oregano. Stir for about 30 seconds to let the spices toast with the onions and oil.
  • Add in the sliced jackfruit sirfry. Add back 3 tablespoons of the reserved jackfruit liquid. Stir to mix all the ingredients well.
  • Cover and let simmer for 10 – 15 minutes stirring occasionally until most of the liquid is absorbed or evaporated.
  • I added about 1 tables spoon of salt and gave it a good stir. Salt to your preference, and don’t forget to stir!
  • Remove the jackfruit “carnitas” from the pan.
  • Wipe out the pan heat it back up and add in the oil. Add in the sliced onion and sliced bell pepper and fry until they just start to become soft. Set them aside.
  • Toast your corn tortillas in the pan.
  • Assemble your tacos with the jackfruit “carnitas”, the fried onion and bell peppers. Top with Avocado pieces, cilantro and a squirt of lime (optional)
