This recipe is crazy easy, but don’t let that or the spinach steer you away. This breakfast packs a ton of flavor and is very filling and healthy.
There is just something magical that happens when you fry some garlic and olive oil with some fresh greens. It makes an amazing flavor. In this recipe I’m using spinach. Put an egg on it and call it breakfast!
Super Easy and Healthy Low Carb Breakfast

1 handfull fresh baby spinach
2 cloves garlic
1/2 tablespoon Olive Oil
1 Egg
Directions
- Prep the spinach and garlic by roughly chopping each
- Heat up a frying pan over medium high heat add in the oil and the garlic. Fry for 30 – 45 seconds
- Add in the spinach, salt and pepper. Fry and mix well for 30 seconds.
- Make some space in the middle of the pan by moving the spinach to the sides crack your egg in the middle of the pan. Cover and cook for 2-3 minutes.
- Remove the spinach from the pan with tongs and place on your plate. Place the egg on top and enjoy!
